“Our job is to sort of find single cask whiskeys that are quite special and bring them into the market as a single cask snapshot of that distillery,” he explained. The meticulous attention given to each cask ensures high-quality whiskey. Flint-Hill says their rigorous process: “Every cask sits on its own. We can actually go and see and touch and look at the end of every single cask. What it means is every week, we can do a walk around, and we can actually look for, you know, can we see drips on casks? Can we see this?”

Flint-Hill mentioned a regulatory change that opened new opportunities for the American market: “There was a big change, especially for Scotch, with the 750 ml regulations changing a couple of years ago for the USA. What it means now is that independent bottlers such as ourselves if we bottle one cask and we get 300 bottles out of it, we would only typically do 700 ml. We didn’t have access to America before unless you were doing specific 750 ml bottles.”
